    In a small bowl combine the biscuits, sugar and butter. Press into silicone moulds making sure the mixture is compact!

    In another bowl whip the cream until think, add in the soft cheese, sugar and vanilla and mix until combined. Top the base with the filling and press down so it’s to the top of the moulds.

    Freeze for 1.5 hours so they become solid.

    Remove from the freezer and pop out of the moulds and leave to soften.

  5. 5

    Mix the caramel and pecan halves in a bowl and top over the cheesecakes once soft.

    Add extra pecans if you fancy!
