Cook the sausage in the oil. Add the seasonings, thyme & garlic.

Then add the tomato paste, sweet potato and water and bring to the boil. Simmer until the potato cooked.

Add in the tortellini and cook for 2 minutes.

Add in the spinach and stir until wilted.

Remove from the heat and stir in the cream.
