    Mince the garlic, onion and ginger. Chop the tomatoes and deseed the green chilies. Peel the potatoes and make cubes.

    Make cubes of the beef and sear on all sides in a big pan with oil. When browned, set aside.

    In the same pan fry down the spices, followed by the onion, garlic and ginger.

    When translucent go in with the bay, curry leaves, beef, spices, tomato and green chili peppers. Cover and let simmer until the beef is almost tender.

    Finish with lemon juice, cilantro, water and the potatoes. Cook until fork tender.
