Mince the onion, garlic and roughly chop the parsley.

Mix all the ingredients together in a bowl and mix by hand

Slice the pitas in half and stuff them with the mixture.

Grill on all sides until cooked through

Roughly chop the parsley and mix with the other ingredients

Mix luke-warm water with the yeast and let sit until bubbles form.

Mix the flour with olive oil, salt and sugar. Pour over the yeast mixture and knead until smooth.

Cover and let rest for 1 hour or until doubled in size.

Slice the dough into 8-12 equal pieces and make balls.

Let rise for another 15-30 minutes. before rolling out.

Bake in the oven or BBQ at 200-240 degrees Celsius, on a piping hot pizza stone or baking tray. Flip a few times, to make them puff better. (this can also be done in a very hot pan.
