Slow Cooker Chicken Avocado Quesadillas
These are such a great finger food for little ones and are so easy to make.

Mix all of the ingredients for the chicken in a slow cooker and cook on high for 4 hours or low for 6-8 hours.

Once cooked, shred the chicken and store in the fridge in an airtight container until ready to use. Be sure to shred finely for babies.

Heat a frying pan without oil over medium heat.

Spread some mashed avocado over the bottom of one tortilla. Sprinkle over some chicken and a bit of cheese if using. Lay another tortilla on top.

Slide into the heated pan and cook until slightly golden on each side, around 2 minutes each.

Slide out of the pan and cut into small wedges. Allow to cool to an appropriate temperature.

Serve! Delicious with sour cream for dunking.
