Sauté the sliced onions until they’re translucent and slightly browned. Then set aside.

Sauté and sweat down the mushrooms until they’re completely cooked through. Add in the sautéed onions along with chipotle paste, salt, pepper, smoked paprika and Chinese 5 spice. Stir over low heat for 2 minutes.

Add in your desired amount on to one side of the tortilla topping with mozzarella cheese and cook on both sides for 1-2 minutes on medium heat until you get to your desired crispiness.
