    In a pan add oil and mustard seeds. Once popped add chopped onions. Once translucent add in hing, curry leaves mixing for 1 minutes

    Then add in the green chilli paste, potatoes and corn, stirring a few times. Mix in the salt, turmeric and a good splash of water, stir, cover and leave it on low heat for about 20 minutes stirng frequently so it doesn’t stick to the bottom and burn

    Once the potatoes are cooked through, rinse the poha under warm water and add to the spiced mixture, along with a squeeze of lemon. Leave on the hob covered on low heat for another 5 minutes then stir well

    Garnish with fresh coriander and it ready to eat! My siblings and I love eating this with some ketchup (don’t knock it till you try it!)
