Chickpea salad is one of my favorite healthy-yet-delicious vegan dishes to make. The addition of smoked paprika takes the flavor to another level. Once prepped with all the ingredients, the recipe comes together in no time. Great for weekly lunch meal prep as well.

    In a pan over medium heat, add 3 tbsp olive oil along with the chickpeas, cumin, smoked paprika, a few pinches of salt, & black pepper to taste. Cook down 3-4 mins.

    Add onions and garlic along with more salt & pepper to taste. Cook down another 3 mins.

    Pour into food processor and pulse for about 30 seconds.

    Add all the remaining ingredients and continue to pulse for another 30 secs to 1 min, or until visually combined to your liking.
