This recipe is off the CHAIN, my friends! Crispy tofu, creamy peanut butter, savory-spicy-garlicky-peppery goodness. Every bite is a mouthful of delicious flavor and texture. The best part: it couldn’t get any easier coming together all in one pan.

    Heat a wok, cast iron, or stainless steel pan over medium high heat. Add 3 tbsp olive oil. Once smoking, add tofu with a generous pinch of salt & pepper. Stir in, cook down 2-3 mins.

    Add harissa paste, stir in, cook down 3-4 mins.

    Add onion & bell peppers with more salt & pepper to taste, cook down 4-5 minutes, or until the tofu is browned and crisp on the edges.

    Add garlic with a bit more salt, stir in, cook down 1 min.

    Whisk creamy peanut butter together with about 1/2 to 1 cup boiling/hot water, until it is smooth and pourable (add more water if needed). Add half the peanut butter to the pan and cook down another 1-2 mins.

    Serve tofu over rice with reserved peanut butter, scallion, and sesame seed.
