Roasted Tomato & Basil Soup

    Chop the large tomatoes in half.

    Chop the red onions into large chunks.

  3. 3

    Chop the top off garlic bulb.

  4. 4

    Add all of these ingredients to a baking tray and drizzle with olive oil and salt.

    Bake at 200 degrees for roughly 35 minutes.

    Allow veggies to cool.

  7. 7

    Add to a blender along with roasted garlic and fresh basil.

  8. 8

    Blend until smooth.

  9. 9

    Add to a bowl and serve with a cheese toastie.
