Creamy Pesto Orzo topped with Roasted Tomatoes

A hearty dish perfect in the snowy weather.

Ingredients

    Add olive oil to the pan.

    Add onion, broccoli & garlic.

  3. 3

    Cook for 3/4 minutes.

    Coat cherry tomato in olive oil and salt.

  5. 5

    Bake in the air fryer for roughly 15/20 minutes.

  6. 6

    Add your orzo and give this a good mix.

    Then add your stock cube, coconut milk and allow to simmer for around 10 minutes (until orzo is cooked).

    Top it off with your roasted cherry tomatoes and it is done.
