Boursin Pumpkin Pasta

Add 2 wheels of boursin, 1 small head of garlic, 700g pumpkin, a drizzle of oil and herbs to a roasting tin, cover with foil and oven bake for 40 mins at 180C.

Remove the foil and bake for another 10 mins - until the pumpkin is soft and garlic golden and mushy.

Towards the end of the cooking time, cook 300g pasta according to packet instructions.

Squeeze out the garlic and mash the pumpkin and boursin using a fork.

Add loads of pasta water to make it extra creamy, and add the cooked pasta - mix everything together.

Top with crispy chorizo and black pepper to serve!
