    Saute green onion and garlic in olive oil for 1 minute or until fragrant.

    Add in grated ginger, coconut milk, red curry paste, fish sauce, and sugar. Cover and let simmer for about 10 minutes.

    Prepare your noodles and toppings of choice.

    Cook noodles according to instructions on package.

    Top with pan fried tofu, sautéed portobello mushrooms, 6 minute jammy egg, some shredded carrots, seaweed, chili oil, green onions and cilantro.
