In a large skillet over medium heat, add 2 tbsp extra virgin olive oil. Add in your onion and garlic and cook for 3 minutes until fragrant and translucent.

Add in your carrots and bell pepper and continue to cook for 5-7 minutes until veggies soften. Then remove everything from the pan and set aside.

Add ground beef to the pan. Cook and break up for 3 minutes. Add baggies back in the pan along with black beans, kidney beans, canned tomatoes, and all seasonings. Cover and cook for 5-10 minutes.

Uncover and add transfer everything to a baking dish or oven safe pot. Add cornbread mixture on top (you can use store bought or homemade). Bake at 375 for 30 minutes or until the cornbread is golden and fluffy.
