In a skillet over medium heat add sesame oil and turkey and cook for 3 minutes while crumbling turkey.

Add in green onions, garlic, carrots, shiitake mushrooms, and water chestnuts. Cook for another 2 minutes, stirring everything together.

Add in hoisin sauce, soy sauce, and rice vinegar. Stir and cook for another 2 minutes.
