One Pot Enchilada Bake

    Saute onion and garlic until fragrant and soft. Then add in your diced sweet potato, taco seasoning and 1 cup of green enchilada sauce. Cover and let cook for 5 minutes over medium high heat.

    Add in your tofu, black beans, corn, cilantro, quinoa, corn tortillas, and other cup of green enchilada sauce. Stir everything together until mixed. Cover again and let cook for additional 5 minutes.

    Sprinkle Mexican cheese blend on top and broil until melted and slightly browning. This happens quickly so keep an eye on it.

    Top with black olives, extra cilantro, jalapeños, and salsa of choice.
