Sear chicken breast on both sides until golden brown. About 3 minutes per side. Remove and set aside.

Sauté your shallot and garlic until fragrant. Then add in your sundried tomatoes, spinach, and spices. Stir.

Add in chicken broth, heavy cream, and parmesan cheese. Nestle your chicken back into the sauce. Cover and cook for 10 minutes over medium heat until cooked through.

Serve over mashed potatoes with extra parmesan cheese, cracked black pepper, and fresh basil.
