    In a pan add 1 tbsp olive oil and toss in your chopped onion, bell pepper. Saute for a couple minutes then add in your spinach and saute until wilted. Set aside.

    In a blender add in 8 eggs, 1 cup cottage cheese, shredded cheese and slices. Blend until smooth.

    Grease a cupcake tray with butter. Add in your veggie mixture then top it off with egg mixture.

    Bake in oven at 350 for 25 minutes.
