    In a large pan over med high heat coat with avocado oil. Add onion and garlic and sauté until soft and fragrant. Push onions and garlic to the side then add your ground beef and break into small pieces. Cook for about 2 minutes stirring often and mop up the juice by tilting the pan to the side.

    Add in frozen or freshly grated ginger. Stir again. Then add in 1/2 of your sauce mixture we made. Mix.

    Then add in the remainder of your veggies. Carrots, bell pepper, cabbage, spinach, cilantro, basil, green onion, mint. Add in the rest of your sauce and cover and cook over medium heat for about 10 minutes so your veggies get soft.

    Take lid off and stir everything together. Cook for additional 5 minutes uncovered. Serve with toasted sesame seeds on top and a homemade peanut sauce.
