    Preheat the oven to 375°F (190°C).

    Marinate the lamb and potatoes together in olive oil, lemon juice, garlic, oregano, salt, and pepper for at least 30 minutes.

    Arrange the lamb, potatoes, and sliced onions in a roasting pan. Add water or broth for extra moisture.

    Cover the pan with foil and roast for 2.5-3 hours, depending on lamb size, until tender.

    Uncover, increase the oven temperature to 400°F (200°C), and continue roasting until the lamb has a nice glaze to it and the potatoes are golden, about 15-30 more minutes.
