Albanian Fasule with Meat
This Albanian fasule takes me straight back to my childhood!

Prepare the Beans: After soaking the beans, boil them for 15 minutes. Drain, then add fresh water to cover the beans by 1 inch. Bring to a boil, cover, and simmer.

Make the Sauce: In a separate pan, heat 2 tbsp olive oil. Sauté the finely chopped onion and minced garlic until soft. Add the salt, paprika, and coriander. Stir in the tomato paste and chopped tomatoes. Let it simmer until it reaches a sauce consistency.

Combine the Sauce and Beans: Pour the sauce mixture into the simmering beans and stir to combine.

Cook the Meat: In the same pan (rinsed), heat a bit of olive oil and brown the cubed meat on all sides. Add the browned meat to the stew. Simmer for 40-60 minutes, until the meat is tender and the beans are cooked through.

Serve: Optional: Garnish with fresh cilantro, black pepper, and a squeeze of lemon. Enjoy with pilaf rice and a small side salad for the perfect meal.
