Weekday Pasta with Bacon and Mushrooms

A cost-effective and delicious dish that can make plenty of portions.

    Add bacon or pancetta to a cold pan and crisp up over medium heat. Set aside.

    Crisp the mushrooms in the leftover pork fat and set aside.

    Sauté the onions and garlic in the remaining fat, without browning them.

  4. 4

    Cook the pasta and use the pasta water to deglaze the onions and garlic.

  5. 5

    Add the peas, lemon juice, mushrooms, and bacon/pancetta to the pan.

    Remove from heat and add the butter, swirling it in to create a sauce.

  7. 7

    Add the cheese and parsley, and serve.
