Oatmeal Chocolate Chip Muffins
Light and fluffy muffins made from oats, olive oil, chocolate chips, and walnuts. These muffins are hearty and truly delicious. They’re perfect to meal prep and enjoy for breakfast or snack.

In a large bowl, combine the oats and milk. Let this sit for 10-15 minutes until most of the milk is absorbed.

Mix together the sugar, eggs, vanilla, and oil.

Combine the oats with the wet mixture and add in the remaining dry ingredients and mix until evenly combined. Let the batter sit again for another 10-15 minutes to thicken.

Fold in the chocolate and walnuts.

Line the muffin tins and bake on 425°F for the first 5 minutes, and then turn the heat down to 350°F for the remaining 20 minutes.
