High-Protein Peanut Tofu Bowl

    Press the tofu with paper towel to remove any water and dice into cubes. Add tofu to a bowl with cornflour, salt and pepper. Toss to coat the tofu (doing this in a container and shaking it is easiest).

    Whisk the sauce ingredients together until smooth.

    Heat a frypan over high heat and add a tbsp of oil. Cook the tofu until golden all over.

    Pour in the sauce and toss. Reduce heat to medium/low and cook for 1-2 minutes until the sauce has reduced.

    Serve in a bowl with the rice, edamame, avocado, sesame and spring onions. Drizzle on some vegan mayo if you like. Enjoy!
