Cook the brown rice: Bring 2 cups bone broth to a boil. Add 1 cup brown rice, reduce heat, cover, and simmer for 35-40 minutes. Fluff and set aside.

Preheat oven to 400°F.

Toss ingredients: Toss cherry tomatoes, broccoli, onions, and sausages with 1 tbsp olive oil, 2 tbsp pesto, salt, and pepper on a sheet pan.

Roast for 20-25 minutes.

Toss with pesto: Remove from oven and toss everything with 3 tbsp pesto.

Meal prep: Divide brown rice (about 1/2 cup per container) into 4 containers. Add 1 sausage and veggies to each.
Notes
Reheating: Microwave: 1-2 minutes. Oven: 350°F for 10-12 minutes. Enjoy within 4 days!
