Ingredients: 3 chicken breasts (cooked and chopped in a food processor); 0.25 cup avocado oil mayo; 0.25 cup cottage cheese; 1 tbsp fresh dill (chopped); 0.25 cup red onion (finely diced); 2 sticks celery (finely diced); 1 tsp Dijon mustard; 0.5 tsp salt; 0.25 tsp black pepper; 0.5 tsp garlic powder; 1 tbsp lemon juice (or juice from 1/2 lemon); 1 tsp dried parsley

Enough for four lunches
