    Cook the pasta: Boil the pasta according to the package instructions. Drain and set aside.

    Cook the chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until browned and fully cooked, about 7-8 minutes.

    Cook the veggies: Add the bell peppers and onion to the skillet. Cook until softened, about 5-6 minutes. Stir in the fajita seasoning and cook for another 2 minutes.

    Combine: Reduce heat to low. Stir in the cooked pasta and Greek yogurt and cheese until creamy. Season with salt and pepper.

    Portion out: Divide the mixture into four meal prep containers. Top each with cilantro, if desired.
