    In a bowl, mix the shredded chicken, 1/2 cup cheese, 1/2 the Enchilada sauce and 1/4 cup Greek yogurt until well combined.

    Place a portion of the chicken mixture into each tortilla, roll them up, and place seam-side down in the dish.

    Mix the remaining enchilada sauce with 2 tbsp Greek yogurt until smooth, then pour it evenly over the rolled tortillas.

    Sprinkle the remaining cheese on top.

    Bake in the Ninja crisper on the bake setting for 10 minutes until bubbly and lightly golden.

    Garnish with chopped cilantro, if desired.

    Store your enchiladas in the fridge or freezer to enjoy later!


Notes

Reheating Instructions Using Ninja Crisper: Dethaw: Leave the enchiladas on the counter for about 1-2 hours before reheating. Crisp: Place the enchiladas on the Ninja crisper tray. Cook: crisp at for 5-10 minutes, or until heated through with tinfoil over cheese to avoid it from burning. Rest: Let them cool for 2-3 minutes before serving.
