Barbecue Chicken Quesadillas
These sheet pan quesadillas are the perfect weeknight dinner! They are both affordable and easy to make!

Mix together the shredded chicken, diced white onions, and desired amount of barbecue sauce. Set aside.

On a prepared sheet pan, assemble the tortillas by adding six tortillas along the sides and then two in the middle. Make sure the initial six tortillas hang over the sides of the pan, so that they can later be folded over.

Add two cups of the shredded cheese. Spread the chicken mixture on top and then add the remaining two cups of cheese.

Fold over the tortillas along the sides of the pan and add two additional tortillas to the middle to ensure the cheese is covered. Press down gently to flatten the tortillas slightly and then insert toothpicks (if necessary) to keep the quesadillas together.

Bake at 425 degrees for about 15-20 minutes or until the tortillas are golden brown and crispy.

Let the quesadillas cool for about 5 minutes before cutting into slices. Add your toppings and enjoy!
Notes
Store in an airtight container for 3-5 days.
