Trim off the bottom tip of the Chinese broccoli. Optional: peel rough fibers at the end of the root for a more tender bite. Wash and clean.

Marinate the beef with dark soy sauce, cornstarch, soy sauce, black pepper and baking soda. Mix well and set aside for at least 15 mins.

Thinly slice whole garlic to make garlic chips.

In a large pan or wok, boil water and blanch Chinese broccoli for 30 seconds. Remove and soak in ice bath to stop the cooking. Strain dry.

Remove all the water from wok and heat 2-3 tbsp of cooking oil in the wok on medium-low heat. Continuously stir the garlic so it doesn’t burn. Remove from oil once the garlic has turned lightly golden. The residual heat will continue to cook it to a deeper golden color.

In the same oil, sauté marinated beef until 90% cooked through.

Add blanched Chinese broccoli and sesame oil and toss well. Cook for another 1-2 mins.

To serve, top with fried garlic chips and enjoy!
