This is the first thing I was taught to make at catering school in France. This is my version of this easy, tasty autumn/winter warmer!

    Wash thoroughly and then cut the leeks, carrots, turnips and celery “Paysanne” style.

    Add to a large pan over medium heat and sweat in half the butter for 5-6 minutes.

    Then add the lardons and a little salt and pepper and cook for 5-10 mins - the lardons do not need to colour.

    Add the water, bouquet garni, seasoning and cabbage and bring to the boil and simmer for approx. 50 mins.

    Then add the potatoes, French beans and peas and cook for another 30 minutes approx.

    Check for seasoning and add the remaining butter and stir et voila!
