This is my version of this very easy to make French pudding, traditionally done with cherries but I had some raspberries leftover and thought I would use them! Infact any berries or stoned fruit work well. This dessert is lovely warm or cold. Perfect served with cream and a nice chilled glass of Cremant de Loire!

    Pre-heat your oven to 190c.

    Generously butter the bottom and sides of your flan dish (glass or ceramic) - avoid using a metal dish.

    In a bowl put your raspberries and the tablespoon of sugar and leave to rest.

    In another bowl whisk your eggs, vanilla, sugar and salt.

  5. 5

    Then add your sieved flour and whisk again until you have achieved a smooth batter.

    Whisk in the cream slowly and once incorporated, also whisk in the milk.

    Put the raspberries in the flan dish and pour the batter over them.

    Put into your pre-heated oven for 40/50 minutes until golden and the centre is fairly firm and springy to the touch.

    Leave to cool down for 20 minutes on a wire rack.
