Gigli Pasta with French Onion Soup Sauce
This is my version of a very tasty pasta dish, with the sauce incorporating the flavours of French onion soup! A robust Pinot Noir or Burgundy would be a great pairing with this dish.

Melt butter and add a splash of olive oil in a pan over medium heat. Add sliced onions and a pinch of salt. Cook until caramelized, approx 15-20 minutes.

Add thyme and garlic to the pan. Deglaze with red wine.

Pan fry smoked pancetta in a little oil. Once cooked, discard the fat and add mushrooms. Cook for a further couple of mins. Season with black pepper and add parsley.

Add beef stock to the onion pan and a little of the jus from the mushrooms if desired. Bring to the boil and then simmer until the mixture has reduced by half.

Bring a large pan of water to the boil. Add a little salt and cook pasta (approx 8-10 mins). Once cooked, drain and mix with the onion sauce. Add the garnish of pancetta and mushrooms and finish with grated parmesan.
