This is my version of a really easy and very tasty pasta dish that gives you the taste of Provence in minutes. Perfect for a mid-week dinner served with a chilled glass of Côtes de Provence!

    Boil a large pan of water and add a pinch of salt. Add the linguine and cook until al dente.

    Heat the tomato sauce - I had frozen a batch of my tomato sauce that I made last week and so I defrosted that and re-heated it gently until hot.

    In a separate pan, over a medium heat, splash the oil in, (do not allow it to boil as this will make the olive oil very bitter), and then add the chopped capers, black olives, chopped anchovies and chopped basil and heat through gently.

    Meanwhile, drain your linguine and add to the tomato sauce, mix well.

    Plate up the linguine and pour the olives, capers and anchovies mix on the top. Garnish with a couple of basil leaves.
