Spiced Honey Cauliflower Salad with Cashew & Herbs

    Preheat the oven to 425. Place a large sheet pan in the oven while it preheats.

    Make the oil mixture. Add the olive oil, 1/2 tsp salt, 1/2 tsp paprika, 1/2 tsp garlic powder and 1/2 tsp cumin to a small bowl. Mix together.

    Make the yogurt mixture. Add the yogurt, the remaining salt, paprika, garlic powder and cumin to a small bowl. Add the honey and cilantro and mix to combine.

    Add the cauliflower to a large bowl. Add the oil mixture and toss to combine. Next, add the yogurt mixture and toss again.

    Add the cauliflower to a hot sheet pan and spread out. Place in the oven for 35-40 minutes, tossing after 20 minutes and again 10 minutes later.

    While the cauliflower roasts, make the cashew-herb mixture. Add the parsley, cilantro, cashews, olive oil, lemon zest, lemon juice and honey. Mix to combine.

    Add the cauliflower to a large bowl with the arugula, dates, red onion, avocado and herb mixture. Toss to combine.
