    Add the ricotta, feta and lime juice to a food processor and process until smooth.

    Next, add the corn to a large bowl with the cheese, scallions, cilantro, chiles, pimentos, cumin, salt, paprika, garlic powder, chili powder and oregano. Mix to combine.

    Add the ricotta and feta mixture and mix everything together.

    Serve with Milton’s Jalapeño Gluten-Free crackers.
