Bloody delightful vegan almond croissant cinnamon buns, you should make them.

    Mix oat milk, melted butter, and caster sugar together. Sprinkle yeast on top and wait a minute or so till it blooms.

    Add the flour and salt and mix well.

    Cover and leave the mixture for an hour to chill.

    Make the filling by mixing all ingredients together.

    Tip the dough out onto a floured surface and sprinkle some more flour on top.

    Roll out the dough into a big rectangle and spread the filling all over.

    Roll the dough along the width and then slice into 16.

    Put them in a greased baking dish, cover and leave for 25 minutes to rise.

    Bake in the oven at 180°C for 30 minutes (or until golden).

    Once they're cool, drizzle with the glaze and the flaked almonds and dust with more icing sugar.
