Meal prep with Baked Oats 3 Ways for breakfast and BBQ Fajita Rice for lunch.

Ingredients
BBQ Fajita Rice

Baked Oats Base

Add all of the base ingredients to an oven-safe dish. Mix well.

Add the berries/banana. Bake in the oven at 180 °C for 25-30 minutes.

Once cooked, drizzle over the spread.

Add oil to a pan on medium heat, add garlic and onion. Fry for 2 minutes. Add chicken breast and fry for 5 minutes.

Add peppers and fajita seasoning. Mix in the rinsed rice, tomato paste and chicken stock. Bring to a boil then reduce the heat to simmer. Cover for 10-15 minutes until the liquid has absorbed.

Once cooked, divide into 3 portions. Top with 10g of BBQ sauce per portion and coriander (optional).
