    Preheat the oven to 160 degrees c fan 180 degrees c conventional.

    Beat the sugar and butter together until pale and smooth.

    Gradually add the egg and vanilla paste until fully incorporated.

    Add the flour and fold through.

    Spoon into the 6 large muffin cases.

    Cook for 20-25 minutes or until golden and just beginning to crack.

    Remove from the oven and allow to cool completely.

    Beat together the butter and cream cheese.

  9. 9

    Now add the vanilla and icing sugar and mix until smooth.

    Spoon over the cup cakes and finish with strawberries.
