Bacon & Leek Pasta Bake

Preheat the oven to 180 degrees c fan 200 degrees c conventional.

Cook the pasta 2 minutes less than packet instructions in salted water.

Add the bacon to the pan and sauté until golden. Add the leeks and garlic, season and cook until soft.

Pour in the stock and cook for 5 minutes. Stir through the creme fraiche, warm through and stir to combine.

Drain the pasta and stir into the sauce.

Transfer to an oven dish. Dot the mozzarella around the dish. Sprinkle with half the cheese. Then the breadcrumbs, followed by the rest of the cheese.

Cook in the oven until golden and bubbling. Approximately 20-25 minutes.
