Salt Dry Aged Sirloin Steak with Salsa Verde

A simple recipe using Tesco Finest sharing sirloin steak, served with beef dauphinois potatoes and a salsa verde.

    Whiz together the salsa verde and set aside.

    Preheat a large frying pan until smoking.

  3. 3

    Drizzle the steak in a little oil and season generously.

  4. 4

    When the pan is smoking add the steak fat side down.

  5. 5

    Hold with tongs until golden and crisp.

  6. 6

    Pan fry on each side for 2.5 minutes throwing in the whole garlic cloves at the same time.

    Switch off the heat and keep the steak in the pan for another 1.5 minute on each side and let the residual heat continue the cooking process.

    Remove from the pan and allow to rest for 15 minutes before serving.

    Carve and drizzle with the salsa verde.

    Serve with the salad and dauphinois.
