A slightly different take on a classic meatball recipe, loaded with vegetables for added flavor and juiciness.

Directions

    Mix the meatball ingredients together thoroughly and roll into balls (slightly smaller than golf balls) keep in the fridge until needed.

    To make the sauce, sauté the onion until soft and sweet. Add the garlic and cook for 1 minute before adding the tomatoes. Season generously, bring to a gentle simmer, lid on a cook on a low heat for 20 minutes.

    Season the meatballs with salt and pepper. Pan fry the meatballs until golden on each side, transfer to the sauce to cook through.
