Chicken Jalfrezi
It’s finally Friday and tonight I’ll be cooking one of my favourite curries. Ok, so Jalfrezi doesn’t usually have mushrooms involved, but I’m a big fan of adding as many vegetables into curries as possible. Let me know if you give it a go?

Sauté the onions in oil and a little salt until caramelised, this adds flavour to the end dish.

Add the garlic and ginger and cook for 1 minute.

Add the chicken, chilli & spices and coat thoroughly. Cook for 3-4 minutes stirring occasionally.

Pour in the tomatoes, peppers and mushrooms, stir, cover with a lid and simmer on a low heat for 40 minutes.

Remove the lid and cook for a further 15 minutes.

Check for seasoning and serve with basmati rice.
