An OG favourite pasta of mine, so simple to make and so enjoyable to eat.

    Knead and work your dough into a smooth ball before wrapping and resting for half an hour.

    Cut off about a sixth of your dough at a time, flatten and roll into a disc about 10cm long by 1/2cm thick.

    Cut into 3/4cm width strips and then roll, using your fingertips whilst at the same time pushing your hands outwards and apart.

    Roll into spaghetti like strands that are about 1/2cm in diameter.

    Set rolled Pici on a lined baking sheet and dust with coarse semolina.

  6. 6

    Repeat with the remaining dough.

  7. 7

    Cook for 3 minutes in salted, boiling water before serving in your favourite sauce.
