Hand formed semolina dough pasta shapes that come from Puglia.

Roll a piece of dough into a 1/2 inch diameter rope.

Cut into pieces that are about 1.5 inches long.

Place three fingers on the dough, press to dig them in as you drag the pasta towards you.

Repeat the process with the rest of the dough.

Cook in salted boiling water for about 3 minutes.

Finish in your chosen sauce.
