This is my go to egg dough master recipe that makes enough dough for a generous serving for two people.

    Mix flour and semolina rimacinata.

    Beat eggs before combining with the flour.

    Mix well before kneading to bring the dough together.

    Knead the dough.

    Wrap tightly with clingfilm and rest for half an hour.

    Knead and rest again for half an hour before using.

    Dust with a little flour if the dough is sticky.

    Work and roll the dough to produce delicate silky sheets.


Notes

Some hints and tips for working with your dough: 1) Always weigh your ingredients to get the best results. 2) Ratios are super important, I find 55% egg to flour ratio makes a pretty perfect dough. 3) Beat your eggs before combining with the flour to evenly distribute the denser protein rich yolk and the more liquid egg whites. 4) Mix well before kneading to bring the dough together. 5) Wrap tightly with clingfilm then rest for half an hour after kneading then knead and rest again for half an hour before using.
