Cacio E Pepe
Single serve buttery, cheesy, black pepper pasta… what more could you want!?

Pasta dough
Directions

Mix flour and water together in a mixing bowl to form a shaggy dough.

Knead for 8-10 minutes until smooth.

Wrap with clingfilm then rest for 30 minutes.

As your pasta cooks (fresh Pici will take about 3 minutes) in salted boiling water, melt the butter in a pan over medium heat.

Once melted and bubbling, add the pepper then the pasta water and whisk vigorously to emulsify.

Add cooked Pici, toss through the sauce before sprinkling the Parmesan over the top.

Turn the heat down to low and allow the cheese to gently melt over the pasta for a minute.

Add a little more pasta water (just a splash) then toss the pasta well to bring everything together and incorporate the cheese fully into the sauce before serving and devouring.
