Pesto & Buratta
Classic combo for a killer pasta supper, needs no further explanation.

Trim thicker part of stalks from basil and discard. Blanch in boiling water for a couple of seconds before plunging into iced water.

Squeeze as much water from the basil before roughly chopping and placing into the jug of a high powered blender.

Add all ingredients apart from the salt and the lemon then blitz for 30 seconds.

Check to taste then season with a pinch of salt, add the lemon and then an additional free pour of olive oil to loosen the mix slightly.

Blitz again for 10 seconds then set aside until ready to use.

Cook your desired pasta.

Transfer to a large bowl. Spoon in 2/3rds of the pesto mix and a splash of pasta water then mix well to coat the pasta.

Add a little more pasta water if desired to loosen the pesto to your desired consistency then serve.

Tear a ball of Buratta in half and top each plate of pasta with it before spooning over the remaining pesto and eating!
