    Roll out a sheet of dough, passing it through a pasta roller until the penultimate setting.

    Lightly dust the sheet so it doesn’t stick to your work surface then cut into 4x4cm squares.

    Pipe a good amount of your chosen filling into the centre before folding the square over on itself in half so that the long sides are joined.

    Pinch the edges around the filling to close the pasta and force out any air, make sure it’s sealed well!

    Use your thumb to indent the centre of the filled side as you bring the bottom tips of the rectangle together to meet at the font. Pinch the ends together firmly to join.
