Teaching pasta class last week reminded me how much I love this simple shape. It’s so quick and easy to make and is a great introduction to hand making your own pasta at home.

    Mix together semolina rimacinata flour and water (50% water to flour ratio)

    Knead for about 10 minutes until smooth

  3. 3

    Rest for 15 minutes

  4. 4

    Roll out pieces into a 1 inch diameter rope

  5. 5

    Cut 1 inch squares

  6. 6

    Roll these across a wooden gnocchi paddle to get the groves outside

  7. 7

    Cook for 3-4 minutes in salted boiling water

  8. 8

    Serve with your chosen sauce
